Gluten Free Salsa Quinoa Salad Recipe

This is one of my favourite recipes to whip up for lunch especially when I have left over quinoa in the fridge.

Quinoa is such a great food that a lot of people don't know about. It's high in protein and iron and low on the glycemic index. I like how quick it is to cook, just boil the water and cook covered for about 12-15 minutes.

I often bring this salad on picnics or to family gatherings, just to make sure I have a good gluten free starch and protein that I can eat.

This salad is so versatile that you can adjust it based on whatever you have in your fridge!

2 cups cooked quinoa

1/2 cup gluten free salsa

1/2 cup chopped red pepper

1/4 cup cooked corn

1/2 cup blanched green beans

1/8 cup chopped green onions

1/2 cup hemp seed hearts

Mix everything together and refrigerate for at least an hour to allow the flavour of the salsa to be absorbed by the quinoa. Add extra salsa to taste.

What are hemp seed hearts? I've seen hemp flour, but I don't think I've seen that. Are there any substitutes?
