I love to cook healthy and I love salmon! Here is a recipe that left me wanting more. Keep in mind that a six-ounce fillet of salmon (preferebly wild) will give you about 2,000mg of Omega 3. A healthy, omega 3 rich diet considers a daily intake of 1,000 to 2,000 mg.
3/4 cup chopped fresh pineapple
1/4 cup of diced jicama
1.5 Tbs olive oil OR jalapeno-lime olive oil divided
1 Tbs chopped Italian parsley
1/2 Tbs fresh lime juice
1/4 tsp minced fresh jalapeno chile
Lime wedges for garnish
1. Pre-heat oven to 450F. Cover baking sheet with heavy duty aluminum foil. Mix together pineapple, jicama, 1/2 Tbs olive oil, parsley, lime juice, and jalapeno in a glass bowl. Set aside
2. Place salmon fillets skin-side down on baking sheet, drizzle fillets with remaining 1 Tbs olive oil. Roast in oven 13-18 minutes (depending on thickness). DO NOT overcook!
3.Remove fillets from pan (keep skin if desire). Place fillets on plates and top with pineapple-jalapeno relish, garnish with lime wedges
