Creamy Chipotle Chicken Lettuce Cups
You may think tortillas are a necessary part of taco night, but this recipe says otherwise. Time to ditch the carbs! Replace those tortillas with lettuce, and tah-dah: you’ve got a whole new, healthy spin on your classic taco.
Take your lettuce tacos to a new level with this Creamy Chipotle Chicken Lettuce Cup recipe from Tasty.
INGREDIENTS (Serves 3)
12 ounces shredded chicken breast
1 tablespoon coconut oil
1 cup whole milk
1 medium onion, diced
3 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1 canned chipotle pepper, minced
½ teaspoon salt
6 butter lettuce leaves
Pico de gallo salsa
PREPARATION
Heat the coconut oil in a large nonstick skillet. Toss in the diced onion and salt and sauté for about 5 minutes. Sprinkle in the ground cumin and dried oregano. Add the minced chipotle and garlic and sauté until the garlic is fragrant, about 30 seconds. Pour in the milk and stir the mixture to combine. Once the mixture has bubbled and reduced slightly, mix in the shredded chicken until evenly coated. Spoon the mixture evenly onto butter lettuce leaves. Top with pico de gallo salsa and serve. *Note: You can use skim or low-fat milk instead of whole milk, but make sure to reduce it on a lower heat to avoid curdling the milk! (The lower the fat content, the less stable the milk - therefore, it will curdle much quicker.)

3 ripe avocados, diced
½ red onion, chopped
2 tomatoes, diced
¼ cup cilantro, chopped
2 limes, juiced
2 cloves garlic, chopped
Salt, to taste
Pepper, to taste
3 tablespoons red wine vinegar
½ cup feta cheese
Tortilla chips, for serving
PREPARATION
n a medium bowl, combine all ingredients and gently mix together. For best flavor, allow to set 30 minutes. Garnish with additional feta just before serving.

1/4 cup simple syrup (recipe follows):
1/4 cup sugar
1/4 cup water
8 ruby red grapefruits
6 oz silver tequila

PREPARATION
In a saucepan, bring the 1/4 cup sugar and 1/4 cup water to a boil. Wait until they’re completely combined, then set aside to cool. Squeeze the juice out of all the grapefruits, and combine with the tequila and the simple syrup you just made.
