7 Ways to Eat Breakfast Like a King

The nutritional savvy among us know that we’re supposed to eat breakfast like a king, lunch like a prince, and dinner like a pauper. However, mornings are usually filled with missed alarm clocks, mismatched shoes, and a dash out the door — sans breakfast. For the sake of your concentration and waistline resolve to make a change. Resolve to eat breakfast. Try one of these seven quick ‘n’ healthy meals to start your day off right.

Mexican Breakfast Tacos:

Scramble four egg whites in a heated pan that’s coated with cooking spray. Once cooked, place eggs on two small whole wheat tortillas and sprinkle with non-fat cheese and a few spoons of black beans. Microwave for 20 seconds and garnish with salsa and a slice or two of avocado.

Pumpkin Spice Oatmeal:
In a microwave-safe bowl, mix together oats and milk until completely cooked. Stir in half a can of pumpkin puree, a dash of pumpkin spice, a teaspoon of cinnamon and sweetener of your choice. This can be prepared the night before and reheated.

AM Pizzetta:
For an Italian-inspired start, take two slices of crusty bread and spread it with low-fat ricotta and sliced cherry tomatoes. Season with salt, pepper, and a drizzle of olive oil. Broil in the toaster oven until warm and crisp.

Berry ‘n’ Yogurt Parfait:
Perfect for a warm morning, in a large glass, layer 1 cup of Greek yogurt sweetened with sweetener of your choice with a blend of strawberries, blueberries, raspberries, and blackberries and a sprinkle of granola. Repeat layers until complete.

Egg Mc-at-Home Muffin:
Fry one whole egg (or scramble three egg whites) in a pan heated and coated with cooking spray. In the same pan, warm a slice of Canadian bacon. Place egg and bacon on a toasted whole wheat English muffin with a slice of fat-free cheese and thin slice of tomato (optional). Enjoy immediately.

Cereal Sundae:
Take your Cheerios to go by mixing a bowl of fiber-filled cereal of your choice with a self-serving of vanilla yogurt. Add an extra boost of fiber by stirring in a quarter cup of nuts, fresh fruit, or berries.

Orange Berry Smoothie:
A perfect option for those on the go, blend a cup of fresh or frozen berries with yogurt, orange juice, 1 tablespoon each of wheat germ and honey and a dash of vanilla extract. Serve chilled and take to go.
