Thank you for addressing the subject of a gluten-free diet and pointing out that gluten-free foods are not fortified with vitamins and mineral. As you mention, individuals with celiac disease or who are gluten intolerant need to avoid gluten in their diets. But, those without these health issues need to ensure that they are getting adequate vitamin and mineral intake if they choose to eat gluten-free.
